Well, it is no secret that my oldest daughter switched from homeschooling to public school about a month ago. Our mornings have gotten a lot earlier and a lot more rushed. I’ve found that great breakfast recipes make all the difference in getting everyone out the door or going with the minimum of stress… and in the morning a minimum of stress is a necessity as is a big mug of tea!
I. Am. Not. A. Morning. Person. At. All. Anything that helps me in the morning is amazing in my book. I’ve made these breakfast sandwiches for years. They are so stinking good. They are pretty easy to make and I make a dozen at a time, so it gives me an edge up on breakfast for the week. Yippee! When my girls were younger they could only eat half of each sandwich so they lasted forever. It was lovely! Now, they might make it a week, but if I make some muffins on the weekend as well…I should be set for at least one week.
To make your breakfast sandwiches, start by mixing up your egg mixture. Place it in a muffin pan(affiliate link) and cook in the oven. I have all the specifics in a printable recipe at the bottom of this post.
While the eggs are cooking, cook your bacon and set it aside. Cook your English muffins, top with cheese and bacon and set aside.
The eggs look funky when you cook them. Don’t worry about it. They taste great! Just make sure to cook them until they are fully set. You don’t want any runny eggs.
After the eggs have cooled, take them out of the pan and place one on each English muffin. Cool completely. Wrap each sandwich in plastic wrap and place in a freezer bag. Store in the freezer.
When you are ready to eat them, remove from the plastic wrap and defrost in the microwave. After they are defrosted, place them in the toaster oven and warm on the toast cycle or at 350 degrees for 5 to 10 minutes (just long enough to brew some coffee or steep some tea…see I told you this would help your morning!). Warming them this way will result in a toasty, crisp breakfast sandwich.
Yumminess! So glad I made these today. I can’t wait for breakfast now…which is not something that is normal for me to say unless I’m having breakfast for dinner. They are great to make on the weekend and finish off during the week…more to help the morning be just a touch easier.

Oh those look so good to me right now! Unfortunately in the country I live in there is no bacon and no English muffins, but as soon as I go to the States I’m going to try these out! 🙂 Lisa
Oh that is a bummer! We’ve recently given up pork, so the no bacon part is easy, you could just make them without. If you wanted to, you could also just use whatever bread you like and a circle cutter (or glass the same size) and cut the bread out to the right size. I would toast the bread first, but it would work to make and freeze for later. HTH
